Give rind a chance.

I posted a while back about the nutritional value of the pineapple core/heart.  In that same vein, I’d love for you to consider watermelon rind. The rind is actually a great source of Vitamin C, Vitamin B6, Vitamin A, Magnesium, and Potassium.

Half of a small round watermelon and a handful of ice cubes makes a nice single serving for a fresh smoothie

I’m good with eating the rind straight from the watermelon, but I also often throw it into the mix when I make a smoothie. The skin of  a watermelon is often waxed for marketing purposes (like most fruits), so I’ll generally peel the melon first and leave as much rind in tact as possible before I throw it in the VitaMix with a handful of ice cubes, and wallah…
